Man, those Italians really do take their espresso seriously. Did you know there is a ‘Italian Espresso National Institute‘, founded with the goal of safeguarding and promoting espresso done the ‘right’ way? They help achieve this goal by certifying equipment that is designed and tested to conform to rigorous standards that will produce the perfect espresso. So, where do you go to get this perfect espresso? Check this list, though if you’re not in Italy you’re out of luck. They also list a number of books that guide baristas in their craft.
